The manufacturing method has been passed down since the early Meiji era, preserving the traditional taste to this day. Moriguchi-zuke, a Nagoya delicacy, involves pickling long, thin Moriguchi daikon radishes – unique to this region – in a special mixture of sake lees and mirin lees. This intricate pickling process takes three years to complete, resulting in a distinctive flavor profile that elegantly brings out the essence of sake lees. The secret behind its popularity lies in its satisfyingly crunchy texture. Among other popular items are Uri Narazuke, which features pickled green gourds, and Yamagobo Miso-zuke, made using Aichi Prefecture's distinctive red miso for a unique touch.
